The Crusade wants to use a captive troll against its enemies, but it is being less than cooperative.
Speak to Sindret at 30 in the courtyard of Dragonspear Castle and ask her if she's a Troll handler. She'll indicate that the designated Troll handler is missing, and she needs you to retrieve a pair of Troll Shackles in order to subdue one that is nearby.
Another possibility is to speak to the Troll at 31 and demand that it submit to being shackled, which will provoke it into attacking. Now attack it until it lies unconscious, but avoid outright killing it if you want the full rewards. That is to say avoid inflicting bleeding damage, acid damage or fire damage on it. If you succeed it will lie unconscious and now speak to Sindret again. She'll reward you with 4,000xp, a Potion of Power, a Potion of Magic Protection, a Potion of Clarity, a Potion of Heroism and a Potion of Freedom. Killing it results in 1,400xp plus the 4,000xp Quest reward, but no Potions.
You can try to convince the Troll to cooperate and willingly be shackled. A Barbarian, Blackguard or Fighter can threaten the Troll. A Mage can confuse it with a long-winded metaphysical dialogue option. A Bard can sing it to sleep. But none of these options will work if your Hero of Baldur's Gate is an Elf, meaning the Troll considers you a delicacy and wants to eat you. That leads to trying to resolve the Quest the same way as beating it into submission.
