The roots for J.K. Rowling's spells:

    Accio-accio, "I summon"
    Aparecium-appareo, "I make visible"
    Deletrius-deleo, "I erase"
Densaugeo-dens, "teeth" and augeo, "I make grow"
    Diffindo-diffindo, "I split apart"
    Dissendium-dissideo, "I separate"
Enervate-enervo, "I weaken" (kind of ironic, actually. Rowling uses it to invigorate things)
Expecto Patronum-especto, "I await" and patronus, "a guardian"
Expelliarmus-expello, "I drive out" or "I expell" and arma, "weapon"
Finite Incantatem-finite, 'end' and incantatem, 'spell'
    Impedimenta-impedimentum, 'impediment'
    Incendio-incendia, 'fire'
    Obliviate-oblivio, 'oblivion' or 'forgetfulness'
Petrificus Totalus-petra, 'rock' and totaliter, 'entirely'
Priori Incantatem-prior (just like the English word) and incantatem (see Finite Incantatem)
Rictusempra-rictus, 'a laughing smile' and semper, 'always'
    Reparo-reparare, 'repair'

Some other useful things from Henry Beard, author of Latin for All Occasions:
    What's happening?
    Quid fit?

    Your fly is open.
    Braccae tuae aperiuntur.

    Fat chance.
    Fors fortis.

He also offers this bumper sticker:
Si hoc adfixum in obece legere potes, et liberaliter educatus et nimis propinquus ades.
If you can read this, you are both very well educated and much too close.

-from The Magical World of Harry Potter

I also noticed that a lot of the spells in BG2 sound like Latin. Anyone know what they mean (vita mortis cardium/cardio, for example)?

It's meaningless made up mumbo-jumbo. I'm pretty sure one of the BioWare/BIS guys said so once.

*impatiently* Yeah, but what would they translate as?

BTW, where's your Latin phrase? You have Greek there in your title, but that doesn't cut it....

    @Tarol'Ahz:

A woodchuck should chuck that amount of wood, that a woodchuck could chuck wood.

-But if a woodchuck could chuck some amount of wood, what amount of wood would a woodchuck chuck?

Even if a woodchuck could chuck and would chuck some amount of wood, SHOULD a woodchuck chuck wood?

-A woodchuck would chuck and should chuck some amount of wood, even if a woodchuck couldn't chuck wood

    Oh, shut up!
    (something like that)
    ------------
Now translate this for me please
Spellbound, this was from MI2 ;)

BTW: I allways thought it was 'CREDO ergo sum'

I'll give you something you probably swear each time you see and hear:

Debes congerere manum ante pergerendum porro...

And for those who like logic:

Qui bibit dormit. Qui dormit non peccat. Qui non peccat sanctus est. Ergo: qui bibit sanctus est. QED

    For Caesar's fans:

Nil nimium studeo, Caesar, tibi velle placere.
Nec scire utrum sis albus an ater homo ;)

Right, right. I'm sorry. I didn't read that. I promise to translate anything I write in Latin from now on.

*Mumbles about psychological prophiles as well* ;)

Debes congerere manum ante pergerendum porro

You must gather your party before venturing forth

    That about Caesar is:

Nothing I care less, Caesar, than to please you,
Nor [even] to know if you're a white or a black man.

    Catullus, of course.

Nobody's mentioned "Nemo me Impune Lacessit" - the Scottish motto which appears on pound coins?
Literal translation - no-one interferes with impunity
Cultural Translation - wha dare meddle wi me!
Unfortunately i can't check the spelling as I have only an English coin with the rathe dull "Decus et Tutamen" I am informed this means "decoration and protection" and is a reference to the grooves cut in the sides to prevent people filing off gold.
