    @HB - I think you're thinking of stearic acid.

    See here for the 'skinny' on the relative healthfulness of *cocoa* and it's end-products.

    -Flavanols are found in cocoa and are useful anti-oxidants, but alkali or 'Dutch' processing destroys most of them.

    -Sugar and milk (either mixed in with the cocoa to form 'less healthful' forms of chocolate, or consumed along with the chocolate) tend to have fat and other problem substances that counteract the benefits of cocoa's stuff.

    -Even dark chocolate, still high in fat - and almost two thirds of that is the 'evil' saturated kind - has a significant quantity of its fats in the form of stearic acid, which the body can break down into 'better' monounsaturated fat.

    (Is that what you were thinking of, HB?)


    Anyways, here's hoping (belatedly) that the Easter holiday did good to your belief system; whether it strengthened your religious faith that Christ died to save humankind, or your rational(-ized?) faith that Christians are gullible, misguided fools (who at least share holidays and sweets :D ), or...ad nauseam...
