Though there are not very many of them.

I took dual wielding since you can get so many neat bonuses from a weapon and shields are mostly lacking and their weapon style bonus is weak (they should get the crit bonus too and that would help a bit).

Ranged should have gotten a style and then I would favor it though I must say using a powerful crossbow and the energy ammo from the BMU is crazy brutal.

I couldn't choose anything in the poll. In my case it depends on a character that I'm making.
Most fighters use 2 weapons because for most of the game it's the strongest option.
When you get GWW, the second weapon only reduces your damage output (though it may provide bonuses that outweight it). Anyway, when I want terminal power, I choose two handed swords. In my precious game, I soloed the game for the 1st time (Fighter/Illusionist) and chose to use 1 handed weapon+shield. It worked great. And now I'm going to try an archer, so it's will be a bow.

Have never played a fighter (I know) as the main character, but with the NPC ones in game I usually shun two-handed weapons in favour of a nice big shield. Thieves get ranged weapons, mages get staves.
