My favorite one for Baldur's Gate II Enhanced Edition is the Berserker. The rage ability having a chance to go off in combat, but not be the Barbarian's where you can't control what happens (even if it may be weaker). Also, the build of a somewhat, well, dim-witted Berserker with a good heart and a big axe always works good. Haven't played it in Baldur's Gate Enhanced Edition yet, but if it's at all similar, then I'm sure I'd like it a lot. Might start a solo Berserker run, now that I'm thinking about it.

A Beserker / Cleric dual class works really well for a solo run in Baldur's gate. For icewind dale, not so much - you'd probably be better off going with a multiclass fighter/cleric.
Icewind dale really favors the multiclass characters, especially if you plan on doing Heart of Fury mode.
