Just cast armor of faith before changing to a rat with cloak of the sewers and you are immune to physical damage. Since there seems to be no spell that dispels armor of faith you can stand there for the whole duration of the spell. If it runs out you still only take about 3 damage per hit from firkraag, adamantite golems and other tough monsters. Just let your other party members kill the beast with range attacks. When fighting firkraag though try to get a high fire resist as his fire breath is the only thing that will hurt you bad as a rat

I'm just wondering how a rat stops a dragon. Why doesnt the dragon just squish the rat? Does anyone have an idea how this happens?

Well not all in the game is realistic, I think they just forgot or think it's too much work to make such thing but indeed in AD&D the dragon would just squish the rat by his foot.

It would have made more sense to give the rat very low AC and no resists because you should have a hard time hitting something so small yet it would also be easy to kill with one hit.

This time I totally Agree Zort. Is a rat immune to dmg? no!! Is a rat hard to hit? Yes!!

Hard to hit with a sword yes... But is it hard for a dargon to squish a rat? Shoudn't be that hard. Is it hard for an elephant to kill an ant?

It's not that hard to hit a rat. Those suckers are pretty big, and only seem fast because people are too buissy bieng scared of them to wack them eith a broom, or chair, or shotgun er something..
