I can't comment on every NPC, but here are my suggestions for a few of them:

Minsc - he already has 2 slots in two-handed swords, so when he reaches level 9 (or 12) I just give him points in 2-handed weapon style and he becomes a killing machine with 2-handed swords. First, the Sword of Chaos, then Lilarcor, and then the Vorpal Sword.

Viconia - Maces/Slings + Shields. She only has 10 str, so you might wanna give her either the Mauler's arm (raises STR to 18 so she can use larger shields) or the Gauntlets of Ogre Power so she can use heavy armor, too. If not, the Reflection Shield from Adventurer's Mart is a good choice (it's a small shield so STR requirements are low), and so is the Black Dragon Scale (lightweight leather armor with a kickass AC bonus). Later on, just give her the Crom Faeyr (unless your PC uses hammers) or the Flail of Ages.

Keldorn - he's also all about 2-handed swords, plus, he can use the best one in the game, Carsomyr. In that case, it's a no brainer, give it to him and you'll hear "TOOOORM TAKE YOU" very often.

Nalia/Imoen - They should avoid melee at all costs. Just give either one a short bow (like the Tuigan Bow and later on, the Gesen Bow). The staff of magi is also very recommended anyway.

Jaheira - she's versatile, but my choice for her is Scimitar/Slings + Shields. The Saving Grave is a great shield which gives +4 AC and the Belm scimitar which you can find in Trademeet is great.

    Hope that helps a bit.

Korgan? That's easy, a dwarf needs his axe! You can go with single weapon, a shield and a axe or two axes (or possibly a hammer). I usually slap the best axe and shield I can on him and watch him hack his way trough enemy after an enemy.
Still, though, you might want to give him Crom Faeyr to the off hand (after making him a good dual wielder, of course. He already has point or two in hammers though), so that he becomes absolutely unstoppable. Could also be used in main hand.

Jan is like most mage/thieves, give him a ranged weapon - which he already has.

Cernd... well, He isn't really meant for melee (even his shapeshifting is kind of a letdown if it's not rebalanced by mods), so something that enchances his abilities might be right here. If you play trought SoA, you will get the very nice Quarterstaff in Suldanesselar. It's only usable by druids, so let him have it.

Mazzy-Tugian Bow is GREAT early on, and then she can have Gessen's for all is worth!

Jaheira-Reflection Shield is excellent when you face archers, Shield of Balduran is great when you face Beholder-kin, that acidic club bought at Trademeet is awesome and better than Belm in all respects IMHO. (better enchantment level, better damage/THAC0 plus nice acidic damage, and she is specialised in clubs already!) Shield of Harmony is also really kwell against certain opponents. My Jaheira swaps shields according to situation. Ranged attackers? Equip Shield of Reflection! Beholder trouble? Balduran's Shield will protect her. Psionic attacks? Shield of Harmony to the rescue! I do so like Jaheira!

Valygar-Celestial Fury and Pixie Prick did well for me.

Sarevok-Any mighty two-handed sword will do, like Silver Sword, or Psion's Blade. You can alternatively go for halberds, for Ravager+6!

Haer'Dalis-Never used him for long, but he already own quite decent swords IIRC.

Light Crossbow of Speed are excellent for Keldorn, Jan and Sarevok, lightning/poison bolts do serious damage!

I´m thinking about Jan and Haer´Dalis in particular, with their UAI later on, ex. Haer´Dalis wielding Carsomyr or such?

I'd have to agree with Silverstar about Jaheira, she's one of the best NPC's to have around. She is a capable fighter, and a good druid. Give her ANY strenght enhanching item(even gauntlets of ogre strenght will do the trick), good shield(shield of harmony +2 comes to mind), nice armor(ankheg plate, to be replaced with white dragon scale armor later in ToB), and a good weapon(blackblood +3 for SoA, to be replaced by Spectral brand +5 in ToB), and she is ready to deal with just anything. Ironskin will protect her from most damage. She can be nearly invincible. Her only problem are low hp, but nothing that few potions can't cure.

About Haer´Dalis wielding Carsomyr: not a good idea. He's a dual wilder, not two handed weapon specialist. If you want to put Carsomyr to good use, dual class Sarevok to thief, and he'll be ablo to use nicely.

    Cernd - his claws
Imoen - Gesen, Staff of the Magi
    Jaheira - Impaler, Ixil's Spear
    Jan - his rapier wit
    Keldorn - Carsomyr or Purifier
Korgan - Dwarven Thrower, Crom Faeyr
Minsc - Azuredge, Axe of the Unyielding
Sarevok - Ravager, Psion's Blade, Silver Sword
    Valygar - Celestial Fury

Clerics basically get the same weapons: Flail of Ages, Mace of Disruption, etc.

Shields are so combat specific -- although the Reflection Shield (sends missiles back at the shooter) always goes to Aerie.

    Aerie - sling and staff.
Anomen - either mace & shield or flail & shield if no one else is using the flail of ages
Cernd - his claws or staffs
    Haer´Dalis - shortswords
Imoen - Gesen bow or staff
Jaheira - scimitar and shield or club and shield
    Jan - crossbow
    Keldorn - 2h swords
    Korgan - axes and hammers
Mazzy - usually shortbows - otherwise I switch her over to melee and unlike the others I really have no usual melee weapon pattern with her
Minsc - 2h swords/halbards or dual wielding maces (or flails if no one else is using the flail of ages) and hammers. I would say that the breakdown is 50-50 between the two styles.
    Nalia - shortbow and staff
    Sarevok - 2h swords/halbards
    Valygar - dual wield katanas
Viconia - either mace & shield or flail & shield if no one else is using the flail of ages
