Well, I've been quite a fan of the SF/Fantasy genre for awhile, and naturally have a few picks that deserve mention.

    Fantasy:

George R. R. Martin (Song of Ice & Fire series)
    Dragonlance:
    (Chronicles/Legends/Legend of Huma/Lord Toede)
Weis & Hickman (Death's Gate Cycle)
    Forgotten Realms
    (Avatar/Empires/Moonshae trilogies)
    Ursula Le Guin (Earthsea trilogy)

    Science Fiction:

Frank Herbert (Dune books, the Dosadi Experiment)
    Dan Simmons (Hyperion series)
    Tad Williams (Otherland series)
    Frederik Pohl (Gateway series)
    Douglas Adams (Hitchhikers Guide series)
Isaac Asimov (Foundation, Foundation & Empire)
Orson Scott Card (Ender & Bean series)
    Kim Stanley Robinson (Mars trilogY)

I've read all of Jordan and the Goodkind books, but find them rather boring at this point. Jordan started off so well, but lost his way after "Lord of Chaos". "Heart of Winter" wasn't bad.

I've read pretty much all of the DL and FR series, but the ones listed above are the ones that truly stand out.

Tolkien is a legend in creating the genre, but I read them again before the movies came out and was reminded of their dryness.

Well that's all I can think of right now, anyone else have a case to make?

IMHO LotR is the bomb. The king of the fantasy books.

If the LotR is the king of all fantasy books, then I must definitely say the Chronicles of Narnia, by C. S. Lewis, as well as Madeline l'Engle's Wrinkle in Time, Wind in the Door, and other fantasy books are second to Tolkein.

I just want to say that while Tolkien is king of fantasy, Douglas Adams was at least the crown prince of Sci-Fi.

Or maybe "clown prince" would work better :p
