I've tried switching to Crom Faeyr, I've tried the Flail of the Ages and I've tried a sling. All of them still only give me ONE attack per round???
Is this normal? This is at the very beginning of ToB if that matters for some strange reason??

Pure clerics never get more than one attack per round in this game. It's nearly always much better to get 7 - 9 (or 13 if you're persistent) levels in fighter first, then dual class to cleric. Then you can benefit from the fighter's additional attacks per round.

A multiclass fighter cleric, or perhaps better yet a ranger/cleric works too, but I've always been partial to human dual class fighter/clerics.

Crom Faeyr and Flail of Ages don't give additional attacks per round, so those aren't going to help in that regard.

As Marceror says, pure class clerics never get more than one attack, same as druids, mages, bards and thieves. Fighters, rangers, palladins, barbarians and monks do get extra attacks per round as they level up.

A dual-class fighter/cleric will not be that different than pure class clerics, spellcasting wise, if you dual early (lvl 7 or 9). Dualling at lvl 13 will reduce your cleric's effectiveness in spellcasting for much of the game, though towards the xp cap, you'll only miss out on 2 cleric levels (you'll have a F 13/C 38, as opposed to a F 9/C 39 or a pure cleric at lvl 40).

A ranger/cleric dual class gives you more or less the same benefits, though rangers level more slowly so ranger lvl 9 is a bit further away than a fighter lvl 9, xp-wise. You'll gain access to druid spells for your clerics, though, which is very useful.

I'm partial to dualling as well, because you might lose out on the fighter HLAs, but you get roughly double the lvl 7 spells, which I like a lot.

If you picked the Priest of Lathander or Helm kits you could use the Boon of Lathander or Seeking Sword innate abilities to increase your number of attacks per round. The Energy Blades HLA also gives you 9 attacks per round (making it a sort of ranged Whirlwind). Bottom-line is that as long as your single class cleric wasn't trying to replace a warrior then his default 1 attack per round shouldn't be an issue.
Dual-classing also gives you a significant HP boost, another reason why a fighter/cleric dual-class can be a pretty good front-line warrior.

Don't give Crom Faeyr to a cleric unless you have no other NPCs to give it to, clerics can easily reach 25 strength without it.
