There is somethiing I have noticed that is fairly common for most magic casting creatures in BG2, that is they will not use attack spells against summoned creatures. The only spells I have seen used are death, maze and spells of that nature. Rather than use attack spells they seem content with using melee attacks.
I found the best way to beat beholders was to use summoned creatures, a lot of them. You then move them to the edge of the viewable area until they attack the beholder(s). Once they do RUN because the beholders will move straight in for the kill and when they see you they will shoot past your beasts at you. Once you're in the clear just watch the box below until the fight is over.
I had to do it this way for the seeing eye quest because I just could not do it any other way. Later I just charged them with my warriors that had all the relevant protection spells and fired magic missiles at them with my mage.
Be careful charging elder orbs because they have a nasty habbit of casting some sort of imprisonment on you. Whatever it is it ends the game for you if it is cast on your main character.
