After digging in the player handbook 3,5 I could not find if the copper dragon can change into a human. I know many others can, but the copper is my focus.

A quick look in the Draconomicon gave me gold, silver and bronze dragons changing forms to those of humanoids. Nothing relating to copper.

In 2e, copper and brass dragons could not polymorph; they probably didn't change that.

Yes, reds can polymorph (not to mention a few others), but I was focusing on the base five metallics. Then again, if their wizard spells got powerful enough... :hmm: I'll have to get back to you on this; I'm not near my books right now, so I can't check them for three hours at the earliest. Expect an edit then.

    EDIT:
Coppers can cast a 4th-level wizard spell (like Polymorph Self) once per day after they reach great wyrm status (1200+ years old). It's something of a sacrifice though, being the only 4th-level spell they could cast that day, and has a normal duration unlike the other metallics' innate polymorphing ability (which lasts until their next change). Brass dragons still can't, though.

That's 2e, of course, and you should check your own reference books for a copper dragon's spell progression in 3.5e.

If you are DM, give them ability to polymorph to human or any other humanoid...
