What weapon skill would you start out with? I know I'm gonna be signing for the battles but I can't think of what his best weapon would be.

I can't speak for the EE version, but bows are king in BG1.

Oh, I forgot to mention I'll be getting the buckler +1 AC and Con bonus at the FAI so I want 1 handed.

I was almost thinking dagger because you can get a +1 from the start and throwing ones also.

Darts work too (3 attacks per round/APR). At low levels the extra APR might be handy for disrupting casters and later on enchanted (poison) darts can be pretty nasty.
At higher levels when you're not walking around invisible sowing confusion among your foes you'll either be casting buffs or nukes. I'm guessing on the off chance you need to attack something you're doing it out of desperation.
Throwing Knives are ideal for this because they get bonus damage from strength (only in EE, one of the weirder EE changes) and have a base APR of 2.

Daggers seem like a pretty good option for a bard, especially with throwing daggers. Darts can be a good option, too.

Why do you want to use a buckler, though? The additional protection they offer is pretty minimal at best.

Probably to gain the +1 con bonus, which on top of the +1 con tome gives you a total of 20 if you start off with 18, which will get you the regen effect.
I use this setup a lot when i solo, the regen helps a lot, you'll always be at full health on an area change, and on rests as well, without having to rest for 5+days when you're really low.

Is that an EE item? I don't know of any buckler that gives +1 con.

Yeah, the item is called Buckley's Buckler, and it's basically a normal buckler (+1 ac) with the added +1 to con while equipped effect.
Besides starting the game as a half-orc, it's the only legitimate way to get 20 con during BG1 that i know of (discounting buff spells).

Is there also a returning dagger in BG EE? The only one I can remember right now is in Ust'Natha.

not as far as i remember - the only returning weapon in the base game i know of is the returning throwing axe you get in the candlekeep catacombs.
Siege of Dragonspear features a returning dart and 3 additional returning axes (though one of them is only usable by a companion) but no daggers.
Finally, they did add in an extra returning throwing hammer in bg2, but no additional daggers.

I do know that you can grab a returning dagger in bg2 way earlier then Ust'Natha though - one of the goons in delosar's inn carries the Boomerang Dagger +2.
You could grab it almost immediately after leaving irenicus' lair, though the enemy party can be hard to handle at that point.

Holy Crap! I completely forgot about that regen at 20 :) I was going to start out with 15 Cha until I got the tomb but this sheds new light on things. I wasted so many potions on my Paladin so far :( Looks like I'll just have a shitty wis unless i roll something uber. I guess a 100 is possible.

I like to give my BG bards crossbows. The Crossbow of Accuracy is a great thing when combined with the archery gauntlets, some magic missles, and maybe a haste spell. Walking machine gun, you are.

More like a walking flintlock rifle. Firing rates on crossbows are not that great, really.

Having a shitty WIS is no downside to a palladin. There's the minimum WIS on character creation, but otherwise it doesn't have an effect at all, as far as I remember.

If i recall correctly, BG1 features a light crossbow of speed that gives you +1 attack per round, which can be bought from Taerom in Beregost.
