Kitchen Madness #6 - Plate Advice?

    Got a pot-luck dinner to go to this Friday, to celebrate the appointment of a new principal at the school I'm at. Need to think of a meal to bring to the dinner and I'm looking for any suggestions that people have.

    Ideally, a meal needs to be able to either be cooked in 24 hours to 8 hours or under 1 hour. It can either be dessert, salad or a mains-type dish, which can be served in small proportions or big (you know the type of meal).

    My current thought is a chilli or curry, set in a slow cooker the night before.

    Any suggestions? Dinner is on Friday (Thursday for you Americans).

    Just to add a bit of fun. It's been a while since I donated to SP, so if I do get any suggestions here that I end up going with, I'll shout that person either a half-year SPS subscription ($20 worth), or just throw $25 Tal's way.

    Got a red thai curry recipe from my mother I'm desperate to cook again (can be cooked with large prawns or chicken) it ses spring onions, red thai curry paste, can of coconut milk, chicken or vegetable stock (my mother is a pescetarian), fish sauce (nam pla), sweet potatoes, the meat, a squeezed lime and diced mango served with chopped coriander.

    Only other recipes in my collection that I've tried so far are the chilli sent before, sweet & sour chicken, a fish baked with vegetables, stroganoff and a five a day tagine which only I liked so hasn't been cooked a second time :lol: Kev is a complete carnivore and didn't read the ingredients properly before telling me to 'go for it' ;)

    Desserts I have banoffee pie or ginger sponge (possibly bara brith as well but that's more a something to put butter on and have with afternoon tea)
