I understand that in the Original Campaign as well as Shadows and Hordes that to move to the next chapter you can't go back to previously visited areas. Is this 100% true or there is some opportunities to go back to previous areas?

The main reasons that I ask are two.

    1. If I slaughter everyone in Neverwinter Ch.1 can I "get away with it" after I have moved on? This would also be true in Shadows and Hordes?

    2. What things are there in each chapter that if I don't do it then I will permanently and very sadly miss out on.

If you reply with spoilers say so so that others are not disappointed...

    1. If you slaughter everyone, you might turn whoever you need to speak to in order to get to the next chapter hostile, thus voiding your chance to get to the next. If you don't turn this whoever hostile, though, slay away! Also, you alignment will likely change to Evil.

    2. Anything you don't do (quests, items, anything) in a chapter, you can't do later.

There's no way to get back to previously visited areas other than ***SPOILER*** you come back to Neverwinter in ch. 4 of the OC, though you can't do whatever you didn't do in ch. 1. Also, you can come back to Waterdeep in the end of ch. 3 of HotU, but again, you can't do unfinished stuff. ***END SPOILER***

Does that also mean that once you've moved to chapter 2 in SOU, you'll never again have access to more than the one henchman you happened to bring with you there?

Indeed. The last chance to change henchman is in the Interlude.
