I mean, as its a pain in the butt to get behind a enemy and attack, can you simply make your thief/Stalker invisible and just have them attack, will they automatically backstab?

Nope, you have to be behind them. (and i think you get a +4 THACO when you do)

Like you could backstab somebody in the face anyway.

The Baldur's Gate used to let you backstab your enemies from the front, unless the extension intalled, but it is no longer available... fortunately. (I hope it's permited to remember the past)
If you can't reach your opponent's back, go to the edge of the fog of war, and show yourself. It will attack you hopefully (unless it is using magic or ranged weapon) if you have Boots of Speed run away and hide.
If it is a spellcaster or archer, it will turn to you. To backstab it, you don't have to be exactly behind of the enemy, so you can achieve to turn it in the correct angle.
But the Stalker can summon skeletons...those can do the favor to you to move your opponents...
Question: Can the Stalker summon invisible stalker? Logicaly it should be... :)
